April Fools. But still, poor Pluto.
Top 3 eats
1. Popcorn in a pickle– this stuff should have a label: “warning: potentially addictive”.

2. Thursday’s throw together dinner: Buffalo chicken burgers, Spanish rice, and steamed veggies. Plus a sauce made from Greek yogurt, whole grain mustard, and Nektar Crystals.

3. Easter dinner: Cream cheese, black bean hummus, and chicken quesadillas (with homemade tortillas). Cabbage and salsa in the background.

Top 3 highs
1. So much time outside! During the week I got 4 runs in (!!!) and I actually enjoyed all the walking around on campus I did.

And on Easter, Terry and I went to the riverwalk. Our time there was brief, due to a rain storm, but I loved getting to see a beautiful part of God’s creation on such a special day.  
2. Dinner and a movie with friends: Saturday night Terry and I met our friends for a quick dinner then went to see My Big Fat Greek Wedding 2. There were so many good laughs in the movie- I highly recommend it for when you’re craving a light-hearted/feel good film.
3. Completing a major project: With all the projects I have coming up, I am just checking them off one by one at this point. I did my presentation on pantothenic acid on Tuesday for my Vitamins class and I think I did pretty well. Something cool about pantothenic acid is that it plays SUCH a vital role in key processes in our body (as coenzyme A). However, deficiencies very rarely exist because it is found in almost all foods. I say we have a pretty smart Creator.

Top 3 Lows
1. Nighttime anxiety. It comes and goes and this week it was a little stronger than normal. Not fun at all. I try to remember that even though it is night, morning will soon come.
2. Terry’s sickness. A bug took him out for a few days and I hated to see him like that. Thankfully he is much better now!
3. Not being with family for Easter. Even though I thoroughly enjoyed my day with Terry, I hate seeing major holidays go by without seeing my family.

The folks at Casper Sleep Inc. contacted me about helping them to spread awareness about Stress Awareness Month. As mattress makers, they’re advocating for using naps as a way to decrease stress. I absolutely love the graphic they sent me, because I am NOT a good napper. I am the kind of napper that will turn 10 minutes into 2 hours. I had to laugh when the representative I was emailing with told me that my recent Day in the Life post looked like I could use a nap. Here here! Who would’ve thought that drinking coffee would help?!

  1. I hope you don’t mind but I joined the Top 3 Friday posts today because I think they’re so wonderful and so much fun! I remember we never talked much about pantothenic acid because it’s pretty universal in foods (in greek, panto means everything, or something – err that’s how I always remembered it at least). I am not a good napper – my body doesn’t let me take naps during the day, but I wish I was! Have a great weekend and glad Terry is feeling better! 🙂

      And yes, pantos means everywhere!
      My naps usually occur when I am too exhausted to deny them- over the weekend.

  2. I may or may not nap just about every day on the weekend. I ❤ naps. I actually figured out the coffee thing years ago and it really works! Only thing is my belly doesn't like laying down after such an acidic beverage so I usually have a bad belly ache for the rest of the day. Story of my life ha!

  4. I don’t really let myself take naps – that “go go go mentality” I need to try to break – but I do know from experience that the 20 minute cap nap works like magic. If I sleep anything more I am groggy and done for the rest of the day, but 20 minutes seems to be the magic number. And yes – drinking coffee before hand ABSOLUTELY works. I usually feel tired right when the coffee is done so fall asleep easy, but then when I wake up I’m soooo good to go.
    Sorry to hear about your rise in night anxiety – that must feel really tough/scary.
    Nectar Crystals!?!? Sounds like you took a trip to mystic land.
    And oh my god how badly do you want that pancake outdoor picnic!?!

  5. I used to be a napper and still do if I have a day off (lol) but now that I work 12-8, an early morning nap isn’t that conducive for me. I want to work on meditating when I can…I’ve been trying to do this for months and it just doesn’t happen. Have a great weekend!

  6. Okay, you fooled me. But I think it’s because I still consider Pluto to be a planet… I never understood why they felt the need to rip its label away. Poor pluto is right.

  8. Oh, I wish I was a napper. Honestly, I’m jealous of my dad being able to take a 15 minute nap in his lunch break and feel refreshed afterwards. I only feel groggy when I try it.
    That riverside looks like a fantastic place for a walk. I’m sure you’d enjoy the surroundings of where I live, too.

  10. I just got so excited about pluto being a planet again! hahahhaa oops!
    Iam so not a napper. I feel like it takes me forever to actually fall asleep and then I feel even more tired when I finally do sleep!
    My favorite way to destress is listening to something relaxing and sipping some hot tea!
    High of the week was walking out of work this afternoon because this week was suuuuper busy and stressful!! Now I’m celebrating by sitting on my couch drinking sangria haha!

    I have been seeing this popcorn in a pickle all over and it is times like these I really wish we had Trader Joe’s around here.
