Simple foods (WIAW)

Yesterday was all about simple foods. I had to finish up two assignments before wrapping up the semester (minus 3 finals) and at 12:15 am Wednesday morning I can say I am finished.

So here’s what simple looked like for me yesterday. Thanks for the link-up!

A simple breakfast… toast & an egg.

Breakfast: Two slice whole grain toast, strawberry jelly my grandmother brought me from her trip to the mountains, neufchatel cheese, and a fried egg. The usual coffee and dark chocolate.

A simple morning snack… grapes.

A simple lunch… leftovers.

First skinny peppermint mocha of the season. Not bad, but not nearly as good as I remembered from last year. It might be who made it. I drank about half before realizing it wasn’t getting better.

A simple afternoon snack… a classic.

Banana + MELTY peanut butter. Melt your peanut butter 1st. Do it.

A simple dinner… crockpot style.

One of my favorite easy meals is putting carrots, potatoes, and onions on the bottom of a crockpot and then placing a whole chicken on top. Cook on low for 8-10 hours. The veggies are out this world savory and the chicken is super moist. And luckily I’m getting better and better with de-boning meat.

Stove top popcorn (simply salted) with mini dark chocolate Hershey’s. This plate x2. We will be watching the Star Wars saga over the next two weeks and last night we watched #2. Can you believe it is my first time seeing them? So far I really like them. Teenage Anakin is kinda creepy, but Obi-Wan Kenobi is the man.

  1. I’m not really a Star Wars fan because my brother made me watch it a billion times growing up. They’re not bad though. Especially the early ones.
    Simple meals are always my favorite. I love cooking a whole chicken in the crockpot, but I never think to put veggies on the bottom. I’ll have to try that!

  2. Simplicity is where its at. ESPECIALLY at times like you are in. Congrats on finishing the assignments and good luck on the final exams – you are SO close!! And then you celebrate.
    SB lattes and be hit and miss and depend on a number of different things – I know full well being a past barista myself. Love the melty pb tip. And I love that you have a sectioned off styrofoam plate for your popcorn 🙂

  3. Yay for simple foods! For me, simple foods are as close to their original form as possible. Fruits, veggies, and things like that. Thanks for sharing your What I Ate Wednesday! I love seeing everyones food and sharing my own!

  4. Yay for being done with the semester! I have one more week of finals then I’m free. Also, that pumpkin ricotta pasta dish looks delicious.

    My favorite simple foods are avocado toast or apples + almond butter. My mouth is drooling just thinking about it.

  5. Simple food to me is peanut butter and jelly. Sometimes I like complex flavors, other times I just want a loaf of bread with nothing on it. When I stick to whole foods, rather than packaged things, I find myself eating simply.

  6. I love your mug!! Is it weird that that is the one thing in your post that excites me the most? I totally have a coffee mug obsession…seriously, I’m creating a coffee bar in my house as an odd to all of my mugs!! 😉

  7. Love this! Looks a lot like what I have been eating! I love Starbucks, but it really does suck when the drinks don’t taste the same all the time! Popcorn has been my go-to snack recently at night as well 🙂

  8. I love bananas dipped in almond butter but always stayed away from peanut butter because it wasn’t very “dippable”. Definitely need to try melting my peanut butter first, not sure why I never thought of that!

  10. I’ve been meaning to movie marathon the Star Wars movies too but I’m waiting for a really snowy weekend to do it. Last time I used my crockpot it took 8 hours for the carrots to get somewhat soft… needless to say, a new crockpot is on my Christmas list. Roasted veggies = the best and simplest food!

  11. Whyyyy haven’t I mever melted my peanut butter??! Thank you for the tip 🙂 And I tend to think of Starbucks as one of the more consistent coffee shops and assumed they had really specific guidelines for everything. But apparently such is not the case! That’s really too bad about the drink disappointment!! My meals have been oh so simple also. Lots of nut butter and toast and hummus. Totally not complaining 🙂
