Pasta and emoti(c)ons

AHH! How are you guys doing? I am SO close to being done with this semester, and unfortunately I’m [over] it a little too early. Ya feel me?

I have a case study I’m supposed to working on, so this is going to be a short one.

First, a shout out to my friend Cindy, for inspiring this delicious pumpkin ricotta pasta bake!!!

I adapted the recipe to what I had on hand, but I mostly stuck with her directions. I love how pasta recipes are so easy to personalize! I used onions instead of mushrooms and whole wheat spaghetti noodles for the pasta. I also added spinach on top, so that when I broiled it at the end of baking the spinach became nice and crispy.

I love when a pasta isn’t too saucy, but when the parmesan cheese coats the noodle. Ah.

Buzzfeed’s Snapchat story had this little chart on it one day and I think I want to print it out and put it on the fridge. Let’s talk about our emotions, eh?

So Friday night was the last episode of America’s Next Top Model. I watched this show since I was a pre-teen, so it was bittersweet saying goodbye. I’ve known for a while that I’ve outgrown it, but I could not stop following along. I can’t tell you how many marathons I’ve watched, but I can say I’ve seen every episode. Don’t know if I should be proud of that or not. My favorite winners were Dani, Nicole, and Keith. Any other fans out there?

Terry shared this on FB this day and I just had to laugh. I remember those days of gathering enough quarters so my friends and I could take a trip to Taco Bell. Their bean burrito will always be in my heart.

    I love one pot meals like this! They’re so convenient!

  2. I love that taco bell FB post! I am totally posting it to my friend’s wall! 🙂 I am feeling satisfied this morning, except I wish I put chocolate chips in my oatmeal instead of cacao nibs. Fail on my part.

  3. Oh my goodness! Your rendition of the pumpkin ricotta pasta bake looks amazing! How did I never think of putting spinach on top and broiling it? You are a genius. I’m sure the onions added a blast of awesome flavour as well – I never buy onions because I’m just terrible at chopping them. 😛

  4. That bake looks awesome. I may give it a try once my lasagna is done. Unless I just go to Taco Bell, because now you have me craving mexican. Man I love taco bell….its delicious but also a nostalgia thing for me. Those soft bean burritos will never get old.

    My emoticon right now….. I think it’s actually confused itself as to what it is. Its probably about 10 emotions smushed into one.
