Terry and I celebrated the end of the week yesterday with some delicious Sweet Frog. Even sweeter because it was FREE.
Tonight I made a classic dinner of spaghetti and salad. Spaghetti has been one of my favorite foods for as long as I can remember. (Though for a long time it was referred to as “pasghetti”). Something about marinara sauce makes me incredibly happy. For tonight’s dinner, I used linguine noodles to switch it up and topped them with chunky marinara mixed with lean ground turkey plus lots of garlic. I usually use whole-wheat noodles, but in an attempt to lower my fiber intake (IBS woes), I used regular noodles. I am NOT willing to give up my veggies, so I opted for iceberg lettuce (lower fiber, basically water) for our salads. Iceberg plus carrots, onions, and celery.
Dinner was served at the coffee table, because, well, it is football season.
That brings me to the dressing. Do you make your own dressings? It is seriously so easy. This honey mustard takes less than a minute. I am a huge fan of honey mustards, but not the typically long list of ingredients that is found in most brands. This honey mustard is just FOUR ingredients. Equal parts honey + lemon juice + olive oil + mustard. Viola! So easy and so yummy. I found this dressing on Kath Eats and have used it ever since. Terry usually prefers ranch (bleh), but he likes this one too.
Before dinner, Terry and some of his students practiced for tomorrow night’s service. The youth are doing the adult service and many of the students are participating in leading worship. I got to sit in and listen to them practice for a little while. Wow. I was seriously blown away. Our teens are so talented. It was just beautiful watching them worship together. Also, I was reminded how awesome Terry is. Every time I watch him sing and play his guitar I fall in love all over again.
I can’t wait for the service tomorrow night!
